Pickles!



So I got pickling cucumbers in my organic veggie co-op & I promised Jacob I'd make him pickles because he LOVES them. Problem is, I hate pickles and have no idea what they should taste like. Why is this a problem? Because the recipes on line are all so vastly different from one another it isn't even funny! The hugest difference seems to be, some call for vinegar and some don't. Some call for dill, some say to use a hot canning process & some just say to leave out for three days... some are ready in 2 months, some in days... some use salt, some use pickling spices, etc, etc. ugh.

I want to make the kind of pickles you get at a sandwich shop or a kosher deli.

I am trying two different recipes this one and one someone posted on mothering.com

"1 part vinegar to 3 parts water, and pickling spice-heat it all together and let it cool. In your container/jar, add your pickling cukes, dill and garlic. Pour the cooled mixture in the container, cover and let it sit on your countertop for a few days. That's it! You can then pop them in the fridge if you want them cold."

the main difference between the two is one calls for vinegar & no salt & one calls for salt & no vinegar... They both will be ready in 2 or 3 days, didn't require heat sealing & don't require refigeration till they are pickled.

I hope he likes them.
