February meal plan

All side dishes depend on what we get in the produce co-op

1st - LLL potluck - I think I am bringing eggplant salad and pita bread
2nd - Fish Sticks
3rd - French Toast (we love the recipe in Deceptively Delicious
4th - Tortilini Soup
5th - Tacos - I make refried beans for these
6th - Spagetti with meat sauce & possibly meat balls too. I have frozen meat sauce. I'll make meatballs if I have time
7th - Lasagna Rolls from the freezer
8th - Chicken Nuggets or Roast Chicken
9th - Make your own Sushi
10th - Pancakes
11th - Meatball Soup
12th - Tortilini with Alfredo Sauce
13th - Stew
14th - The boys asked for a Valentine's surprise. I have no idea what to make.
15th - It will probably be friends & family night for the new Bonefish
16th - Tilapia
17th - Eggs in a Basket
18th - Matzah Ball Soup
19th - Nachos
20th - Lamb Chops
21st - Pizza
22nd - Roast Chicken
23rd - Salmon
24th - Eggs and Cheese on English Muffins
25th - Pumpkin Soup
26th - Tacos
27th - Meatloaf
28th - Exploding Pasta Night. I have no idea what this means or what to make. It's what the boys wrote for that night.
29th - Chicken Cutlets

Help with Exploding Pasta Night - I have used this with great success with my girls:

EXPLODING RAVIOLI

1lb. ground chicken or veal
1 medium onion, chopped
1 garlic clove, minced
1 (32 oz) jar marinara sauce
1 cup tomato sauce
1/4 tsp ground black pepper
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
1 cup low-fat ricotta or cottage cheese
2 eggs
8 oz. bow tie pasta, uncooked
1/2 cup grated Parmesan cheese

In a 5-quart Dutch oven, cook ground chicken, onion, and garlic over medium heat, stirring often to break up lumps of meat, until chicken has lost its pink color, about 5 minutes. Drain off excess liquid.

Stir in marinara sauce, tomato sauce, and pepper. Bring to a boil, reduce heat to low, and simmer 10 minutes.

Stir in spinach, cottage cheese and eggs.

Meanwhile, cook pasta just until barely tender-as directed on package. Drain well. Add cooked pasta to sauce and mix well.

Transfer mixture to 2-quart casserole. Sprinkle Parmesan cheese over top.

Bake in 350 degree F oven, uncovered, until bubbling, about 30 minutes. Let stand about 10 minutes before serving.
